Simple Spaghetti Recipe
Village kitchen. Spaghetti and Tomatoes Simple recipe, great taste... I am not a chef, but love cooking ❤ INGREDIENTS 1~Extra vergine olive oil 2~Dried chilli pepper.. (not fresh pepper) 3~Parsley 4~Cherry tomatoes(slice half) you can use any tomatoes 5~Salt METHOD 1...Cook your spaghetti according to package directions in a pot of well salted boiling water. Molto al dente, meaning undercooked pasta ●Don't over cook your spaghetti ●Don't break your spaghetti. ●Always use enough water to cook your pasta, prevent sticking. |
2...In a pan add extra vergine olive oil, garlic , Parsley, pepper, tomatoes, pinch of salt and cook over medium heat until the tomatoes are heated through and the skins are slightly blistered, about 3-4 minutes ● put ingredients in the pan first, before transferring to heat. This process helps the ingredients to marry themselves and know who is coming to the party, work like magic. ● This process require low heat, don't burn your ingredients. |
3...Take out the garlic and parsley and add 1 cup of pasta water and put in your spaghetti, cook for another 1 minutes until the water is creamy ● Always reserve like two or three cups of pasta water. Taste great this way than adding fresh water. |
4...Continue to toss the pasta and cook so to allow the sauce to slightly absorb. ●Always on low heat 5...Put off the heat and drizzle the pasta with extra virgin olive oil, finish by tossing in the chopped parsley, ADDITION ●The best pasta dish should be moist ●If your pasta gets dried out before serving, add reserved pasta water at a time to bring the consistency right back to perfect,even after hours of cook.
